Celebrated chef Sabrina Gidda (OW 2005) appeared twice on our television screens last week in the Central Region’s Regional Heat of the Great British Menu 2021.
Both Sabrina and Whitchurch-based chef Stuart Collins were shortlisted in the first heat, providing them with an opportunity to refine their dishes before competing head-to-head.
Sabrina presented the following mouthwatering dishes to the show’s resident judges plus guest judge, the UK’s first astronaut, Helen Sharman:
Starter – Black Bomber cheesy leek tart, confit egg and truffle.
Fish Course – Wild sea bass with escabeche vegetables, salt fritters and coco bread, with a rum cocktail.
Main – Brown sauce glazed tenderloin, spiced kofta and coconut masala sauce.
Pre-dessert – Plum jelly and damson gin granita.
Dessert – Custard Tart, raspberry ice cream. Parisian apples and raspberries.
However, despite the praise and appreciation from the judges for Sabrina’s dishes, Stuart won the day and goes on to the next round.
Sabrina is Executive Chef at Allbright club, the women’s only members’ club in Mayfair. You can read more about Sabrina here: https://sabrinagidda.com.
